The Chickpea Egg Substitute

Yes, you can use the liquid from canned chickpeas as an egg substitute. It can even be whipped!! Here is some great info from Go Dairy Free.

Non-whipped egg substitute:

  • Drain chickpea liquid into a container.

  • 3 tbsp "bean" liquid = 1 whole large egg.

  • Store leftovers in airtight container or freeze for later use.⠀⠀⠀⠀

Whipped egg substitute:

  • 2 tbsp of "bean" liquid = 1 large egg white.

  • Put "bean" liquid into mixing bowl, add cream of tartar if recipe calls for it.

  • Begin mixing on low speed with an electric mixer, it will thicken after a few minutes.

  • Turn up mixer to medium speed and continue beating for 7-10 minutes to get to a stiff peak stage.

  • Use whipped aquafaba in place of whipped egg whites in your recipe!
